Broccoli & Arugula Soup

This soup is just what you need on a cool day. Lots of flavor and full of the nutrients you need.

Ingredients

  • 1 Large Head Broccoli, chopped, stems included (about 4 Cups)
  • 1 C Arugula
  • 1 tsp EVOO
  • 1/2 Medium Onion chopped
  • 2 Cloves Garlic, minced
  • 2 1/2 C Chicken Broth
  • 1/2 C Coconut Milk
  • Juice of ½ Lemon
  • Salt and Pepper

Instructions

  1. In a large pot, heat olive oil. Add the onion and garlic and sauté about 3 minutes until onions are soft.
  2. Add broccoli and arugula. Cook for 5 minutes. Pour broth into the pot and bring to a boil. Reduce heat and simmer about 8-10 minutes until broccoli is fully cooked.
  3. Working in batches, transfer the soup to a powerful blender or emulsifier (like a magic bullet) and blend until smooth. Or use an immersion blender right in the pot.
  4. Add coconut milk, lemon juice, salt, and pepper. Stir until well combined.
  5. Add more coconut milk or lemon juice if desired. If it is too thick add a little water.
