This soup is just what you need on a cool day. Lots of flavor and full of the nutrients you need.
Ingredients
- 1 Large Head Broccoli, chopped, stems included (about 4 Cups)
- 1 C Arugula
- 1 tsp EVOO
- 1/2 Medium Onion chopped
- 2 Cloves Garlic, minced
- 2 1/2 C Chicken Broth
- 1/2 C Coconut Milk
- Juice of ½ Lemon
- Salt and Pepper
Instructions
- In a large pot, heat olive oil. Add the onion and garlic and sauté about 3 minutes until onions are soft.
- Add broccoli and arugula. Cook for 5 minutes. Pour broth into the pot and bring to a boil. Reduce heat and simmer about 8-10 minutes until broccoli is fully cooked.
- Working in batches, transfer the soup to a powerful blender or emulsifier (like a magic bullet) and blend until smooth. Or use an immersion blender right in the pot.
- Add coconut milk, lemon juice, salt, and pepper. Stir until well combined.
- Add more coconut milk or lemon juice if desired. If it is too thick add a little water.
