Chocolate Banana Bread

This will satisfy your sweet tooth and provide lots of fiber and protein. Add a protein and some berries for a complete breakfast

Ingredients

  • 3 Ripe Bananas. You will want 2 C of smash bananas
  • 1 C Nut Butter. I like peanut butter for this but you can use any you like. No oil or sugar.
  • 4 eggs, lightly beaten
  • 2 tsp Vanilla
  • 3/4 C Cacao Powder, unsweetened
  • 1/4 C Protein Powder (I use chocolate but you can use vanilla)
  • 1/2 C Walnuts, chopped
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 C Dark Chocolate Chips, sugar free

Instructions

  1. Preheat oven to 350.
  2. This can be made as a loaf or in individual muffins.
  3. Grease a loaf pan and line with parchment paper or grease silicone muffin cups.
  4. Using a potato masher or the back of a fork, smash bananas.
  5. Add eggs, nut butter and vanilla. Mix well. Set aside.
  6. In a separate bowl, mix together the cacao powder, protein powder, baking soda and salt. Mix well. Add to banana mixture folding gently. Fold in walnuts and chocolate chips.
  7. Pour into prepared pan. Top with a few chocolate chips.
  8. Bake for 40-50 minutes in the loaf pan. Check often by inserting a toothpick until it comes out clean. If using muffin cups, bake for 30-40 minutes.
  9. These easily become dry so check often so you don’t overcook them.
