55 MinChocolate Banana Bread
This will satisfy your sweet tooth and provide lots of fiber and protein. Add a protein and some berries for a complete breakfast
Ingredients
- 3 Ripe Bananas. You will want 2 C of smash bananas
- 1 C Nut Butter. I like peanut butter for this but you can use any you like. No oil or sugar.
- 4 eggs, lightly beaten
- 2 tsp Vanilla
- 3/4 C Cacao Powder, unsweetened
- 1/4 C Protein Powder (I use chocolate but you can use vanilla)
- 1/2 C Walnuts, chopped
- 1 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 C Dark Chocolate Chips, sugar free
Instructions
- Preheat oven to 350.
- This can be made as a loaf or in individual muffins.
- Grease a loaf pan and line with parchment paper or grease silicone muffin cups.
- Using a potato masher or the back of a fork, smash bananas.
- Add eggs, nut butter and vanilla. Mix well. Set aside.
- In a separate bowl, mix together the cacao powder, protein powder, baking soda and salt. Mix well. Add to banana mixture folding gently. Fold in walnuts and chocolate chips.
- Pour into prepared pan. Top with a few chocolate chips.
- Bake for 40-50 minutes in the loaf pan. Check often by inserting a toothpick until it comes out clean. If using muffin cups, bake for 30-40 minutes.
- These easily become dry so check often so you don’t overcook them.
