With 20g protein per biscuit, these are the perfect breakfast for busy mornings.
Ingredients
- 1 small Yellow Onion, diced
- 16 oz Ground Meat (Turkey or Beef, or use sausage for added flavor)
- 1 tsp Chili Powder
- 2 tsp Smoked Paprika
- 1 tsp Red Pepper Flakes
- 3 C Baby Spinach, chopped (or use chopped Kale if preferred)
- 1/4 C Almond or Cashew Milk
- 6 eggs + 1 egg yolk. (Use the egg white to brush on the biscuits before baking)
- 1 1/2 C Almond Flour
- 1/2 C Coconut Flour
- 1/4 C Ground Flax Seed
- 1/2 C Nutritional Yeast
- 1 tsp Garlic Powder
- 3 tsp Baking Powder
- 1 1/2 tsp Sea Salt
- 1 tsp Black Pepper
- 1/4 C Manchego Cheese, shredded
Instructions
- Preheat oven to 375
- In a skillet sauté the ground meat. When almost done, add the paprika, chili powder and red pepper flakes. When done, drain off any fat and press a paper towel into the mix to soak up any additional fat. Transfer to a large bowl.
- In a separate bowl, combine the almond and coconut flours, ground flax seed, nutritional yeast, garlic powder, baking powder, salt and pepper.
- Add the dry ingredients to the meat and mix well.
- Spoon evenly into a silicone muffin mold, parchment paper muffin liners or roll into balls and bake on a parchment lined baking sheet.
- Top each with the egg white and a sprinkle of Manchego cheese
- Bake for 12-16 minutes
