High Protein Breakfast Biscuits

With 20g protein per biscuit, these are the perfect breakfast for busy mornings.

Ingredients

  • 1 small Yellow Onion, diced
  • 16 oz Ground Meat (Turkey or Beef, or use sausage for added flavor)
  • 1 tsp Chili Powder
  • 2 tsp Smoked Paprika
  • 1 tsp Red Pepper Flakes
  • 3 C Baby Spinach, chopped (or use chopped Kale if preferred)
  • 1/4 C Almond or Cashew Milk
  • 6 eggs + 1 egg yolk. (Use the egg white to brush on the biscuits before baking)
  • 1 1/2 C Almond Flour
  • 1/2 C Coconut Flour
  • 1/4 C Ground Flax Seed
  • 1/2 C Nutritional Yeast
  • 1 tsp Garlic Powder
  • 3 tsp Baking Powder
  • 1 1/2 tsp Sea Salt
  • 1 tsp Black Pepper
  • 1/4 C Manchego Cheese, shredded

Instructions

  1. Preheat oven to 375
  2. In a skillet sauté the ground meat. When almost done, add the paprika, chili powder and red pepper flakes. When done, drain off any fat and press a paper towel into the mix to soak up any additional fat. Transfer to a large bowl.
  3. In a separate bowl, combine the almond and coconut flours, ground flax seed, nutritional yeast, garlic powder, baking powder, salt and pepper.
  4. Add the dry ingredients to the meat and mix well.
  5. Spoon evenly into a silicone muffin mold, parchment paper muffin liners or roll into balls and bake on a parchment lined baking sheet.
  6. Top each with the egg white and a sprinkle of Manchego cheese
  7. Bake for 12-16 minutes
