Nut Butter Cups

This amazing treat tastes better than the original! Since it is sweetened with maple syrup (or Allulose) it is very blood sugar friendly

Ingredients

Nut Butter Filling
  • 1 C Peanut Butter or other nut butter (No sugar or added oils)
  • 1 C Mixed Nuts, chopped (I use macadamia, walnuts & cashews)
  • 1/2 C Almond Flour or Vanilla Protein Powder
  • 2 Tbsp Maple Syrup or Allulose Syrup
  • 1 tsp Vanilla
  • Dark Chocolate Topping
  • 3/4 C Dark Chocolate chips (no sugar. I like Lilys)
  • 1 tsp Coconut Oil
  • Sea Salt, coarse (for sprinkling on top)
Chocolate Topping
  • 3/4 C Dark Chocolate chips (no sugar. I like Lilys)
  • 1 tsp Coconut Oil
  • Sea Salt, coarse (for sprinkling on top)

Instructions

  1. In a bowl, add nut butter, chopped nuts, almond flour (or protein powder), maple syrup and vanilla. Mix well. Using a large spoon or scooper, divide the nut butter filling between 12 muffin molds. You can use paper muffin cups as well.
  2. Place the muffin pan in the freezer to firm up the filling while you make the chocolate topping.
  3. Make the topping: Add the chocolate chips and coconut oil to a glass dish. Microwave for 20 seconds. Make sure not to overheat. You might need 5 or 10 seconds more depending on your microwave. Remove from the microwave and stir until smooth. You can also use a double boiler to melt the chocolate.
  4. Remove the nut butter cups from the freezer. Pour a a tablespoon of melted chocolate on each nut cup. Sprinkle with coast sea salt. I do this one at a time so that the salt will stick to the chocolate.
  5. Put the muffin pan back into the freezer until the chocolate is set. About 60 minutes. Pop the peanut butter cups out of their molds and enjoy!
  6. Store any uneaten nut butter cups in a covered airtight container in the fridge or freezer
